When you eat salad, you should probably have it with some olive oil, too.
That’s because British researchers recently realized combining olive oil with nitrite-rich vegetables such as lettuce can help protect you from hypertension.
The new research gives light to why former studies linked a Mediterranean diet that’s rich in olive oil, vegetables, nuts, and avocados to a decrease in blood pressure, pinpointing nitrate-heavy vegetables like celery, spinach, and carrots- as well as the healthy, unsaturated fatty acids in olive oil- to have a reaction that create heart-healthy nitro fatty acids.
The study was published in the journal Proceedings of the National Academy of Sciences.
